Mighty muscle’s power pack stew

Handy hint and tips: any leftover stew can be blended and made into a tasty soup!


Ingredients

    Chicken Thighs ( boned and skinless )
  • 1
    Large Onion
  • 4
    Carrots
  • 1
    Broccoli
  • 3
    Large Sweet Potatoes
  • 2 Cups
    Frozen Peas
  • 1
    Medium Swede
  • 1
    Tin of chopped tomatoes
  • 3
    Cloves of Garlic
  • 2 Tablespoons
    Mixed herbs
  • 1
    Chicken Stock Cube
  • 1 Tablespoon
    Extra Virgin Olive Oil
  • 1
    Pint of Water

Instructions

  1. Wash and dry hands thoroughly

  2. Cut the chicken thighs into small pieces on a chopping board (specifically for raw meat)

  3. Slice 1 onion

  4. Wash, peel and chop all vegetables into small chunks

  5. Boil 1 pint of water and add in chicken stock cude – stir till dissolved

  6. Peel and chop garlic cloves

  7. Place all ingredients (chicken, veg, stock etc) into a large pan

  8. Add tin of tomatoes

  9. Add herbs

  10. Stir and bring to boil.

  11. Reduce the heat and simmer until chicken is cooked thoroughly
